Just west of the Colorado Continental Divide, Baja Chimayó specializes in Baja Fish and Baja Shrimp Tacos. A locally owned and operated taco shop sourcing local ingredients and preparing, on the daily, scratch kitchen items from Bluebird Market or from headquarters just down the street in Dillon, Colorado.
